  • When the citron is well ripened, it is picked up and handly selected.

  • It is one of more valubles varieties of cedro. At the moment you can find it only in the region of Calabria called Riviera dei Cedri
 
 

CITRON IN BRINE " A COPPE"

  • After the citron is picked up, it is selected according to the area of origin and brined. When the fermentation process is finished, the citron is cut in helves and handly deprived of the internal part, in a second moment.
 
 

BIG CUBES OF CITRON

  • The Citron, accurately selected and deprived of the internal part, is handly cut in several sizes.
 
 

SMALL CUBES OF CITRON

  • To make this product we adopt the same process as the previous except that the citron is cutted and sieved mechanically.
 
 

SLICES OF CITRON

  • The citron is subjected to the same process as for the cubes but, instead, is cut in slices.
